1. Soy sauce made using traditional methods
Shodoshima Island is located in the Seto Inland Sea.
The history of soy sauce on Shodoshima dates back about 400 years. At the time, stone was being cut on Shodoshima for the construction of Taiko Yoshi's castle. At that time, islanders who were interested in soy sauce from Kishu Yuasa, famous as the birthplace of soy sauce, were taught the manufacturing method, and soy sauce production began.
Salt production was originally popular on Shodoshima, and the island's "salt" was known for its high quality.
Shodoshima's warm climate and clear air were very suitable for the growth of koji mold and the aging of soy sauce moromi.
Located in the eastern Seto Inland Sea, the island's well-developed maritime transportation made it easy to travel between Osaka, the kitchen of the world, and Kyushu, which supplied raw materials such as soybeans and wheat. With all of these conditions in place, Shodoshima's soy sauce industry developed.
2. A historic soy sauce shop on Shodoshima
The Shodoshima head office and factory is located in a corner of "Sainosato," where soy sauce breweries and tsukudani factories from the Meiji era stand side by side. We use a generous amount of freshly made soy sauce that is carefully crafted by a historic soy sauce shop on Shodoshima.
Ingredients: Soy sauce (domestically produced), seaweed (domestically produced), sugar, starch syrup, fermented seasoning, salt, shiso seeds, agar/seasoning (amino acids, etc.), caramel coloring, thickening polysaccharides, acidulant, flavoring, sweetener (licorice), (contains wheat and soybeans).
