The black-eyed pea, black-eyed bean, or goat pea is a legume grown around the world for its medium-sized, edible bean. Its other common name is cowpea, although it is actually a subspecies of the cowpea. The common commercial variety is called the California Blackeye; it is pale-colored with a prominent black spot. Black-eyed peas are incredibly nutrient-dense, packing plenty of fiber and protein into each serving. They're also a good source of several important micronutrients, including folate, copper, thiamine, and iron.
