Pomona IPA is the new modern yeast to produce clean, juicy Hazy IPAs with enhanced biotransformation potential specifically for hoppy modern IPA styles. Designed for flavor and fermentation performance in hoppy beers, this novel hybrid yeast puts a unique spin on a range of beer styles. Named after the goddess of fruit trees, Pomona produces a unique and juicy mango, lemongrass, and starfruit flavor profile with with notes of tangerine, pineapple peach, citrus, and tropical fruits. Pomona was released in the summer 2024 and it has quickly become a mainstay in the toolbox of IPA brewers. Pomona ferments dryer than comparable yeasts and is well suited to Double NEIPA and other high ABV styles. Due to excellent terpene and thiol biotransformation, hopping with tropical hop varieties complements the unique ester profile of this yeast for a punchy fruit character that's crisp and refreshing.
