• Basic Preparation: Pour 900 milliliters of milk (71.0% of the cream) into a food-grade mixing bucket or other mixing container suitable for preparing food. Add 100 milliliters of Heavy Cream (8.0% of the cream), 155 gr of Sugar (12.0% of the cream), 35 gr of Dextrose (3.0% of the cream), 25 gr of Skim Milk Powder (2.0% of the cream), open a 2.0 kg bag of DOLCE DELIZIA 50D GELATO MIX, add 50 gr (4.0% of the cream) into the bucket while mixing for about 60 seconds or until all the solids and flavor have dissolved. Allow the cream to stand for 10 minutes. Whisk vigorously before using it.
